Results of My Journey to Accept My Diabetes Diagnosis. The results of my journey to accept my diabetes diagnosis have led to a deeper connection to myself and greater empathy for others. Acceptance has led to taking charge of my emotional, physical, psychological, and spiritual needs. Accepting where I am at and what is going on in my life positioned me to take charge of meeting my universal needs.

Consistently meeting universal needs of connection, physical well-being, honesty, play, peace, autonomy, and meaning, feels better. When you meet your universal needs you feel affectionate, engaged, hopeful, confident, excited, grateful, inspired, joyful, peaceful, and refreshed. And who doesn’t want more of that? Adapt my journey to your life and what you are working to accept. Experiment with deliberately meeting your universal needs. Notice how you feel. Notice who meets which needs.

Two Recipes to Try:

  1. From Derail Diabetes: Caper Chicken by Nikos Ligidakis
    Olive Oil                                          Black Pepper to taste
    Chicken breasts cut in quarters      2 T Basil
    4 Chopped Roma Tomatoes          2 T Parsley
    4 T Capers                                      1 T Oregano
    ½ T Chopped Garlic                       1 T Thyme
    1 c. White Wine                              1 T Rosemary
    *Sliced Zucchini is optional                                                                                                                                               
    Directions: Brown chicken pieces in olive oil. Then add the rest of the ingredients and simmer uncovered for 45-minutes.
  2. Mixed Berry Chai Latte Smoothie I have experimented to perfection! Enjoy!
    2 c. Chai Latte                                         2 Avocados
    2 c. Vanilla Soy Drink or Coconut Milk   2 Bananas
    ¼ c. Vanilla Yogurt (Chobani)                 ½ c Frozen Mixed Berries or Blueberries
    2 Handfuls of Almonds                           *1 Handful of Kale/Spinach, Optional
    1 Tray of Ice Cubes                                                                                                                                                                  
    Directions: In a blender, combine the 1st two ingredients. Add the rest. Blend together. Serve. Keep the rest for later. You can store it in your refrigerator for up to three days!
